Looked around a bunch and couldn't find any information on what sort of system is necessary to code along with the series. I'm buying a laptop and I'd like to make sure I can use it for this series if possible. Are there some expected system requirements anywhere? Also, would there be any issues using a laptop without a dedicated graphics card?

One requirement is to have a graphics card that supports OpenGL 3.3 or higher (not required before day 242). It shouldn't be a problem on recent laptops, but you should verify that. There shouldn't be issues using laptops integrated graphics card as long as it supports OpenGl 3.3.
For a few episodes Casey uses a xbox 360 gamepad but the game will work fine without it, so it's not required.

Following series initially won't require any special things from your laptop.

A bit later you'll probably want better CPU and 4 cores at least. Otherwise it will a bit painful to run it because game will run too slowly because of software renderer.

Later, as mrmixer alreadhy says, Casey switches to use OpenGL then you'll want laptop that supports at least OpenGL 3.3 core profile - for any recent laptop this should not be an issue. Graphics card performance should not matter much, I think you should be able to run anything even on Intel GPU.

Once he switches to using OpenGL is the 4 core thing still a desire, or will that make it much easier to run on 2?

Probably GHz (single core performance) is more important, because from time to time he does run some heavy calculation code without optimizations on single thread. But core count will most likely be more important when actual gameplay will be implemented (for AI, pathfinding or other logic).

Some day I will make quality software. Programming FTW.

My laptop only supports up to opengl 3.1 so that means I won't be able to play handmade hero. :-(
